             2022 ASSYRTIKO

This single vineyard Assyrtiko that we have imported comes from the Nemea Valley and is fruitier and more moderate in acidity better aligned to our Aussie palate.

To me it’s a wonderful rich mouthful of Chardonnay, Riesling, and Sauvignon Blanc all combined to provide a luscious mouthful of honey and lemon sherbet on its way to the finish.

Enjoy with grilled/fried fish or squid (calamari) grilled octopus or lobster roasted chicken or lamb with lemon sauce.

Terrain.

Vineyard situated in Ancient Nemea. Altitude 500m with 17% incline.

Linear cultivated in terraces/ levels.

Tradition

Predominantly dry grown, water stress the vines. Hand Picked and de-stemmed early morning in small baskets with holes and then placed in a controlled cooling chamber.

Low yielding: 3Ton/per Acre Annual yield: 800 kg per 0.1 H

Cultivation: Certified Organic

Vinification: Cold maceration in controlled environment. Temperature of alcoholic wild yeast fermentation between  12-14℃ in stainless steel tanks and battonage for at least 1 month.

Aging/ Maturation: 4 months aging, 2 months in new American oak barrels and 2 months in new French oak barrels of 225 lt.
